Jaguar Restaurant

The kitchen is led by Chef Oscar del Rivero, who co-founded the restaurant in 2005. Originally from Mexico, Chef Oscar moved to Miami and was immediately inspired by the city’s immense diversity.

He honors multi-regional flavors rather than sticking to just one country’s cuisine. He utilizes premium, fresh ingredients like wild corvina for ceviche and creates a signature line of organic, preservative-free sauces available to purchase.

Some of our traditional Latin American favorites:

From Mexico: Authentic Mexicano Ceviche (corvina with jalapeño-cilantro sauce), Tacos De Pachola, and house-made fresh guacamole

From Peru: Classic Peruano Ceviche utilizing fresh corvina, lime, rocoto chili, sweet potato, and giant Andean corn

From Argentina: Premium cut Churrasco Argentino cooked to melt-in-your-mouth tenderness, paired with classic Latin sides

From Chile: Distinct use of Merken Sauce—a traditional Chilean smoky spice blend made from aji cacho de cabra peppers handcrafted in-house
